We continue with original ideas of vegetables, to make them perfect for both the little ones and the elderly in the house. Today we have 4 delicious recipes where the protagonist is the zucchini, with very simple baked stuffed zucchini recipes and, as always, delicious!

Zucchini stuffed with minced meat

We split the 2 cabalacines in half so that we get 4 servings for two people. With the help of a spoon we empty them.

The meat of the zucchini that we have removed, we will also use it for the filling.

We put a frying pan with oil on the fire, and we add the finely chopped onion and let it brown. Once it is golden brown, we add the very finely divided zucchini meat. And we let both ingredients cook together. Add the seasoned minced meat and let everything cook over medium heat.

Once we have the meat, add the cherry tomatoes, halved. We let everything cook for another 2 minutes and remove from heat.

We preheat the oven to 180 degrees and fill the zucchini with the mixture that we have prepared and put a little grated cheese on top to gratin. We let the zucchini roast for about 15-20 minutes at 180 degrees and we serve them very warm.

Zucchini stuffed with mushrooms

When all the ingredients are cooked we add a splash of white wine and let it reduce.

Remove from the heat after about 5 minutes.

On a baking tray we place the zucchini and fill them with the mixture. We put the grated cheese on top and bake at 180 degrees for about 15-20 minutes.

Season the chicken and add it to the vegetables, letting it cook. When it is done add the white wine and let it reduce. After about 5 minutes, remove from heat.
