5 cold soups perfect for summer

Put aside the myth that soups are for winter, because they are not. And today we are going to show you with 5 cold soups to enjoy this summer. They are delicious and are ideal to take as a first course or for a light dinner. Either way, I hope you enjoy them.

Melon soup with grapefruit

It is a very refreshing soup that is delicious for the summer. To prepare this cold melon and grapefruit soup, for 4 people you will need:

  • 1 liter of melon juice
  • 4 mint leaves
  • 2 pink grapefruits
  • 2 gelatin leaves per liter of grapefruit juice
  • Some slices of Iberian ham to decorate

Making it is very easy. Start by chopping the mint and mix it with the melon juice. Break off one of the grapefruits and squeeze the other. Heat the grapefruit juice, and melt the gelatin leaves that you previously left in cold water in it. Let it curdle in the glasses with the grapefruit slices inside.
To present it, fill each glass with the grapefruit juice-jelly and just fill them with the melon juice with mint. Decorate with some slices of Iberian ham.

Watermelon and basil soup

Refreshing, light and delicious. This watermelon soup looks great Especially if the watermelon you have bought has not turned out especially good and you do not know how to take advantage of it. Ingredients for 4 people:

  • 1/4 of watermelon
  • 2 tomates
  • Half an onion
  • The juice of lemon 1 / 2
  • 4 tablespoons olive oil
  • 2 sprigs of basil
  • Sal Island

Start by peeling the watermelon and onion. Wash the tomatoes and basil. Cut all the ingredients and blend until smooth. Serve cold and decorate with watermelon balls.

Cold cream of mushrooms

Original, different and delicious, So is this cold cream of mushrooms that will delight young and old. To prepare it for 4 people you will need the following ingredients:

  • 2 eggs
  • 4 slices of ham
  • A glass of water

For the cream of mushrooms:

  • 600 gr. of mushrooms
  • 1 potato
  • 300 ml water
  • 1/2 l milk
  • Olive oil
  • Salt and pepper

Put the slices of ham between two papers in the oven, and bake them for 10 minutes at 180 degrees so that they are crisp. Cook the eggs in a pot and when they are, peel and chop them.
We will make the mushroom cream by cleaning the mushrooms, mincing them and sautéing them in the pot with a little oil. We season them, we add the milk, water and pepper. Cook with the peeled and chopped potato for about 15 minutes. Crush and strain the mixture, allowing it to cool.
Serve cold and sprinkle with egg and crispy ham.

Melon soup with ham

It is perfect for the little ones in the house. They will love the sweet taste of the melon and the salty taste of the ham. For 4 people we will need:

  • 1 kilo of melon cut into pieces
  • 200 ml of Ideal evaporated milk
  • 1 teaspoon of sugar or a few drops of sweetener
  • 1 pinch of salt
  • Serrano ham cut into thin strips to decorate

Prepare in a blender the melon into pieces, peeled and without seeds and blend for a few minutes. When a compact mixture is completely made, add the evaporated milk, the sugar or sweetener, salt, pepper and mix everything. Test to see if it is well seasoned and put it in the refrigerator until the moment we consume it. Decorate with shavings of Serrano ham and some melon balls.

Cold avocado soup with ham

Avocado is one of the most versatile ingredients for sauces and soups, and today we are going to prepare it with ham, a delicious cold soup. For 4 people we will need:

  • 2 ripe avocados
  • 1 leek
  • 1 piece of ham bone
  • 150 gr of ham
  • 1 Tomate
  • Water
  • The juice of a lemon
  • Olive oil

Clean the leeks and cook them in a pot with the ham bone and water. Once they are cooked, leave them reserved. Peel the avocados, pit them, chop them and place them in a bowl. Squeeze the lemon and add the juice to the avocados. Mash the avocado with the mixer and gradually add the broth until you get a homogeneous cream. Go through the strainer and add a pinch of salt.

Peel the tomato, and cut it into small cubes. Chop the ham and fry it in a pan with a little oil to make it crisp. Serve the cream in bowls and add some ham shavings and some tomato cubes to each of them.
