5 recipes with eggplant for this Holy Thursday

Today is Holy Thursday, and already in the middle of Holy Week, we wanted to prepare a special recipe for you where the protagonists are the vegetables. These are recipes whose main ingredient is eggplant, but accompanied by other vegetables to make the simplest and most delicious recipes.

Grilled aubergines with tomato sauce

Wash the eggplant and make slices about 2cm thick, with it, don't throw away the stem of the same because it will serve us for the presentation. Put an iron on the fire, and add a drizzle of olive oil. Put the slices of aubergine and cook them on the grill with a little pepper and salt on top. When it's done, place it on a plate with the stem to decorate. Do not forget to accompany the grilled aubergines with homemade tomato sauce.

Baked aubergines with cherry tomato and mozzarella

Enjoy a different way of preparing aubergines. Preheat the oven to 180 degrees, while you prepare the aubergines. Wash them and with the help of a knife and a spoon, empty them. Cut the meat of the eggplant into cubes and sauté it with a little oil, pepper and salt in a pan.
Take each of the empty aubergines and Put on them the aubergine meat that we have sautéed, cherry tomatoes cut in half and the mozzarella cheese pearls. Bake for about 20 minutes, and once ready, decorate with a little fresh thyme.

Eggplant rolls with ricotta cheese

There is no better companion for aubergines than Ricotta cheese. And this time, we are going to prepare some delicious eggplant rolls, stuffed with ricotta cheese and walnuts.

Preheat the oven to 180 degrees. do very thin slices of aubergine, to make it easier for you to handle and fold them. Once you have them, fill each of the ricotta cheese strips and some walnuts, and roll the loaches. To close the rolls without anything coming out, help yourself with some toothpicks. Use a baking tray to place each of the rolls and bake them for about 25 minutes, until we see that the eggplant is cooked. Accompany the rolls with tomato jelly and they will be delicious.

Aubergine Ratatouille Toast

Prepare in small squares an aubergine 10 mushrooms, 2 tomatoes, a zucchini, and half a red pepper. Once you have everything cut, put a pan to heat with a little oil, and add the vegetables. Saute slowly until it's done. Meanwhile, put a few slices of toast in the toaster and when you have the vegetables ready, put a little ratatouille on each of the toasts.

Baked Eggplant Bites

It is a very simple recipe. You just have to ccut slices of aubergine and tomato. Put on a baking tray a slice of eggplant, another of tomato and on top sprinkle Grana Padano cheese above and bake for about 20 minutes. Then decorate with a little oregano on top.
