This is a very popular dish among Sephardic Jews since by tradition it is made in a clay pot on Friday night and eaten during the Shabbat. It is a chickpea stew made with lamb meat.

Ingredients

  • 2 tablespoons of oil
  • 4 cloves of garlic
  • 500 grams of rice
  • 400 grams of pumpkin
  • 1 teaspoon of cinnamon
  • 2 onions
  • 2 green onions
  • 4 cloves
  • 1,5 kilos of lamb cut into cubes
  • 2 eggs
  • 400 grams of quince
  • 4 potatoes
  • a pinch of pepper
  • a pinch of salt
  • 4 carrots

Preparation

  1. In an oven pot with a lid, heat the oil and add the onion and sauté until it begins to brown. Then we add the garlic and brown it too, and then remove them and add the meat that we are going to fry until it is browned on all sides.

  2. While we heat the oven to medium temperature, we are cutting all the vegetables into slices or pieces and we begin by covering the bottom of the pot with the potatoes (the meat is removed and reserved).

  3. Incorporate the carrot forming another layer and then the pumpkin, all this cut into pieces. Add the rice, meat, onion and garlic on top.

  4. Add the quince slices, cinnamon stick, and cloves and sprinkle with salt and pepper, to taste.

  5. Then we mix the egg yolks with two glasses of water and add to the pot, until the ingredients are covered, if necessary add more water.

  6. We let it cook in the oven for half an hour and then over very low heat for about 8 or 10 hours.

  7. We can decorate with the chopped green onion.

    It is not adafine that they show in the recipe. If the photo is adafine, it has chickpeas, potatoes, 1 or 2 eggs per person
