Christmas turkey croquettes, to take advantage of the leftovers

At Christmas lunches and dinners We always like to make more food than the bill in case an unexpected guest comes or simply so they can repeat. The point is that there is always food left over. You know, appetizers already fill us up and we hardly eat the main dishes.

Obviously, since nothing is thrown away, you have to take advantage of these dishes. Eating the same thing again, no matter how good it is, is kind of boring. Is better prepare a new recipe with leftovers. And that's what we've done with these turkey croquettes. With the roast turkey and its filling, some very tasty croquettes come out. And as it will take away a bit of the desire to walk in the kitchen, what better than to fry some croquettes, period.

We can make these croquettes with leftovers from any other meat, vegetable or fish dish, be it chicken in sauce, baked hake, a garnish of menestra and nuts, etc.

Preparation

1. We make a thick béchamel with butter, milk and flour

2. Add the turkey and a little finely chopped garnish, salt and nutmeg

3. we redo a little

4. Let the dough cool and form the croquettes

5. We bread them, fry them and the croquettes are ready to sink your teeth into.
