All the Duchesse Potatoes They are a garnish made from a typical French potato. Presented in the form of mountains that remind us of meringues, duchess potatoes are a fun and even festive way to serve a meat and fish side for kids.

The recipe consists of making a dough based on eggs and potatoes that is later baked in the form of little clouds to brown them and make them crisp on the outside.

Ingredients

  • 1 kg. of patatos
  • 120 gr. of butter
  • 2 eggs
  • Yolks 2
  • White pepper
  • Nutmeg
  • Sal Island

Preparation

  1. To start the recipe, we peel, wash and cut the potatoes into cubes and boil them in salted water, steam them or cook them in the microwave until they are tender. Once ready and drained, mash them with a fork and add the butter and spices to taste.

  2. Next we add the eggs one by one and we mix. Finally we add the 2 egg yolks and mix the dough very well again.

  3. Pour this puree into a pastry bag and distribute the potato mounds on a baking tray lined with non-stick paper.

  4. Bake at about 200 degrees for about 20-30 minutes until the duchess potatoes are golden.
