El esgarrat or esgarraet It is a cold salad whose main ingredients are the Red pepper roast and the cod salted. It is a typical dish of the Valencian Community It is usually eaten as a tapa or an aperitif dressed with minced garlic and a good olive oil. There are also those who put black olives on it.

The name comes to this dish from the way the cod and peppers are prepared by tearing them into small strips.

The cod that is traditionally used to make this recipe is known as "English cod" and it is characterized because the drying time is longer, the meat is more compact and has a more yellow tone. In Valencia it can be found relatively easily, even in crumbs, ready to make this traditional dish. If you cannot access this type of cod, you can use salted cod and desalinate it for a few hours, although the result will not be the same, it will be quite similar.
