The main difference with traditional torrijas is that the bread instead of being bathed only in milk is bathed in a mixture of milk with egg yolks and a little flour which makes the mixture creamier.
For the bread, although nowadays they sell special bread for torrijas, I use normal loaf bread, making sure it has a dense crumb and without many bubbles so that it absorbs more milk and does not fall apart. I also try to cut the bread slices the day before so that they dry a little and absorb more.
