200 gr. chopped or shaved ham
1 chive
30 gr. butter + a drizzle of oil
3 tablespoons of flour
400 ml. milk enters
100 ml. ham or meat broth
olive oil

egg and breadcrumbs
Preparation
Chop the spring onion very finely and fry it in a deep, non-stick frying pan with the butter and a drizzle of oil until very tender.
Add the ham, stir a little and add the flour. Lightly brown the flour to eliminate its raw flavor and to integrate it into the onion and ham sauce. Then we add the broth and milk.
Cook the dough over low heat while stirring until it is creamy and smooth. When it comes off the pan, it's ready.
We transfer it to a greased fountain and let it cool completely to room temperature. Then, we can put it in the fridge before forming the croquettes.
Make the croquettes and coat them, in this order, in flour, egg and breadcrumbs.
Fry them in oil over moderate heat until they are golden brown.
Another option: Freeze the croquettes once breaded.
Then fry them as is, without defrosting. It will save you from having to make the dough every time you feel like eating homemade croquettes.
