Homemade meatballs with tomato sauce

Preparation

1. On a cutting board, we cut the Serrano ham very finely, almost as if it were dust. Add it to a container and add the minced meat with the salt, pepper and nutmeg, the eggs, the white wine, the breadcrumbs, the parsley and the freshly grated cheese.

2. We mix everything with the help of our hands and form small balls that will be our meatballs.

3. In a frying pan we put olive oil and fry the meatballs on both sides for about 8 minutes. When we are making them, we remove them and put them on an absorbent paper to eliminate the remains of excess oil.

4. Cut the onion very thin, and in a pot we put two tablespoons of olive oil. When the oil is hot, add the onion and the two peeled garlic cloves so that the oil takes on flavor. Add the crushed tomato, and season with salt and pepper. If we see that the tomato is very acidic, we add a tablespoon of sugar.

5. Stir, lower the heat, add some basil leaves and let it cook for about 15 more minutes.

6. Once we have the sauce ready, we add the meatballs and let them cook for 10 more minutes, over low heat, covered so that they take on all the flavor.

7. If we don't like lumps, we can pass the sauce through the mill.

8. We serve them warm and ready to eat.
