Iberian secret with blue cheese sauce

Here you have a very simple recipe to make and very rich, a Iberian secret with blue cheese sauce. The secret is a piece of meat that is usually streaked with fat, making it more juicy y honeyed than the loin area. If we also prepare this recipe with a good Iberian secret, then the result is spectacular.

I have prepared the sauce with blue cheese, but you can use Roquefort cheese or any other creamy and intense cheese that you like. As a side, I love grilled vegetables, garlic mushrooms or classic French fries. Enjoy it!

Ingredients

  • Iberian secret fillets
  • 80-100 gr. blue cheese
  • 200 gr. of liquid cream for cooking
  • shawl
  • black pepper
  • olive oil

Preparation

  1. We are going to prepare the sauce first. Pour the cream into a saucepan and heat it.

  2. When we see that it begins to be hot, but without boiling, add the crumbled cheese.

  3. Stir well until the cheese is completely dissolved and the sauce is smooth.

  4. Season to taste and simmer for about 5 minutes until the sauce is creamy.

  5. While the sauce is just cooking, grill the secret fillets with a few drops of oil until they start to brown on both sides.

  6. Serve on a plate, sprinkle with a few flakes of salt and cover with the sauce.

  7. On this occasion I have accompanied it with some slices of grilled zucchini and some garlic mushrooms.
