Lentil salad with feta cheese and mint

Eating legumes in summer is possible if we prepare delicious salads. Today's, of lentils, feta cheese and mint, it's an example.

All the lentils we can cook them at home easily, without having to soak them. If we don't have time we can always use canned lentils, washing them well before putting them in the bowl.

The rest of ingredients are simple: feta cheese, olives, finely chopped chives and a few mint leaves. Dress it as you like the most. Lemon, oil and salt can be a good option.
