Meatballs stuffed with cheese and with Orlando tomato sauce

Today I want to present you a very special recipe for Cheese Stuffed Meatballs with Homemade Orlando Tomato Sauce. And I want to talk to you and say that it is special, because A couple of weeks ago I was able to see first-hand the Orlando tomato factory and fields in Alfaro, in La Rioja, where they showed us how the whole process for the preparation of their fried tomato is carried out, something that many of you surely do not know.

Orlando is a brand that differs from other brands as it incorporates a fried onion and garlic sauce into its fried tomato (in total 7 kg of garlic and 50 kg of onion per 650 liters of oil), almost nothing!

So I'm going to explain a bit how the whole process was and a super recipe for meatballs stuffed with cheese and with Orlando's homemade fried tomato sauce.

The first thing we did is know where everything came fromWe were able to go to the field where the tomato plants are planted and see what the whole planting process is like. What is done is to load the seedbeds with selected high production seeds and they are allowed to germinate in the greenhouse that I show you.

Once the plant has a considerable size it is taken to the cultivation field. It is planted and expected to grow for harvest in summer.

After knowing first-hand everything that happens in the field, we headed to the Orlando factory to know the whole process to make the tomato sauce.

The first thing we did was taste the different types of Orlando tomato that exist in the market, with a tasting. Without a doubt my favorite the fried tomato with ParmesanIt has a touch of cheese that makes it special and it is delicious.

Once the tasting is done, we got down to work to get to know the whole process from the inside.

Vimos how garlic and onion are fried in a traditional way in sunflower oil. Olive oil is used in the Orlando variety that goes with olive oil.

Everything is allowed to cool over low heat for about 2 hours, so that #ElSofritodeOrlando is really at its point. At that moment the onion and garlic are removed with a slotted spoon and discarded to feed the animals.

The oil in which all the substance of the onion and fried garlic has remained, is the one used to mix with the tomato. To do all this process, the mixture is kept all together in a few pots and tastings are progressively carried out to see the degree of acidity of the same.

Finished the elaboration process, Tomato packaging continues, which as you can see, has no waste.
