If you like Mexican Kitchen and your body asks for sauce, take note of this simple recipe of black beans. It is not our concept of sauce, as it is more of a picadillo or pipirrana. It is actually a variant of the traditional «pico de gallo»But with the addition of beans and colored peppers. If you don't like it so spicy, skip the jalapeño. An advice: remember that when something itches in the mouth, drinking liquid does not solve the problem, it aggravates it, because it spreads the particles all over the oral surface. Take something else with a different taste (sweet for example) that this way you will be relieved.

Ingredients

  • 1 can of black beans, rinsed and drained
  • 1 yellow bell pepper, diced, seeded
  • 1/2 red bell pepper, diced, seeded
  • 3 pear tomatoes, diced
  • 1/2 red onion, minced
  • 1 jalapeño pepper, minced
  • 1 lemon, squeezed, and the rind grated
  • 2 dientes de ajo chopped
  • 1 tablespoon of mild olive oil
  • Salt and pepper to taste
  • chopped fresh cilantro

Preparation

  1. In a large bowl, mix the black beans, the yellow and red peppers, the tomato, the red onion and the jalapeño (be careful not to put your hands in your eyes! We must wash them immediately and do not forget that they are the seeds where the spiciness is more concentrated).

  2. In a small bowl, combine the lemon juice and zest, garlic and oil. We water the ingredients of step 1 and remove to cover evenly. We leave in the fridge for about 8 hours, preferably overnight. The flavors need time to come together.

  3. Before serving, season with salt and pepper and mix in the chopped fresh cilantro. Serve with nachos or as an accompaniment to grilled meat or fish. Delicious!
