Ingredients

  • 2 measures of flour yogurt for pastry
  • 1 measure of olive oil with a mild flavor and low acidity
  • 1.5 measures of sugar
  • 1 plain or lemon yogurt
  • 3 eggs
  • 1 sachet of baking powder
  • 1 lemon (2 tablespoons of juice and its grated skin)

Preparation

  1. Combine all the ingredients in the jar of a wide blender and knead or beat everything for a couple of minutes until the dough is very homogeneous.

  2. Grease a microwave-safe mold with a little butter and pour the dough into it until half full, since the cake will rise as it cooks. We put it in the microwave for 5 minutes at medium power (600 W) and later another 5 minutes at high power (800 W)

  3. Let it rest for another few minutes, remove it from the mold and let it cool on a wire rack.
