Pastela of nuts and chicken: A Moroccan dumpling

The dried fruit and chicken pastela is one of the best-known dishes in Morocco. We will prepare a chicken cake richer in fruit and nuts than the one we made a while ago in Recetín. To give the cake even more flavor, We resort to aromatic spices such as cinnamon.

Ingredients

  • A package of filo dough
  • 250 gr of roasted chicken strips
  • 200 gr of onion
  • 50 ml extra virgin olive oil
  • 100 ml of sweet wine
  • Moorish species
  • Ground cinnamon
  • A handful of raisins
  • A handful of walnuts
  • A handful of almonds
  • A handful of pine nuts
  • A splash of orange blossom water
  • Powdered sugar
  • Cinnamon
  • 3 beaten eggs
  • 1 egg for brushing

Preparation

  1. The first thing we have to do is put the raisins to marinate in the sweet wine for about 2 hours before starting to make the pastry.

  2. Toast the almonds so that they are well toasted and put the onion in a pan to cook with a drizzle of olive oil.

  3. Take the grilled chicken strips and add them to the pan when the onion is golden and add the sweet wine and raisins.

  4. After about 3 minutes, add the toasted almonds, walnuts, pine nuts, Moorish spices, cinnamon, orange blossom water and let everything cook over medium heat for about 10 minutes so that the wine evaporates.

  5. Add the beaten egg and let it mix with the rest of the ingredients.

  6. Now comes the time to make each of the cakes. To do this, take the phyllo dough and make it in the shape of small fans (triangles), and paint them with butter.

  7. With the help of a spoon, we are filling each pastry with the filling, and we close the strips of filo pastry so that a perfect triangle remains. Paint again with butter.

  8. Place the pastries in the oven on a baking tray lined with parchment paper and cook them at 180 degrees for about 15-20 minutes until they begin to brown.

  9. Finally, sprinkle with icing sugar and garnish with ground cinnamon.
