Ingredients

  • 300 fresh bonito chopped with a knife (it is better)
  • 1 teaspoon Old mustard (the one from the grains, but if it bothers you use the Dijon one)
  • 3 tablespoons of Mayonnaise
  • 1 level tablespoon breadcrumbs
  • 1 splash of Jerez brandy
  • 1 churadita of olive oil
  • Sal Island
  • Thyme (a pinch)
  • 1 hoja de laurel
  • Spreads

Preparation

  1. Sauté the tuna seasoned with salt, thyme and bay leaf in a frying pan with a little oil. Don't do it too much.

  2. When the tuna is done, water it with a splash of brandy and let it reduce.

  3. Take it out of the pan, remove the bay leaf, and mix it with the mayonnaise, mustard, and breadcrumbs.

  4. Serve in a bowl with croutons to spread. To make it more attractive, use a round or square mold.

    Chive boats with duck ham and mandarin segments, if you also wash it down with a green olives vinaigrette ... ummm it always wins!
