This is one of my chicken fajita recipes Favorite. At home we adore Mexican and Tex-Mex food. Many weekend dinners we prepare tacos or fajitas, they are so easy and fun! In addition, we can bring all the ingredients to the table and have each one make their fajita to their liking, thus less work for the cook and we make a much more participatory dinner.

It is very easy to make and the ingredients are very flights. So it just takes a little practice to wrap them well. But don't worry, we'll use toothpicks to close them. I put a little bit of Tex-Mex spices on them because we are used to eating with that touch of spices since we are little, but if you prefer that your children eat a little softer flavor, you can do without them completely.

Easy tex-mex fajitas filled with spiced chicken strips, bell peppers, onion and a fresh, juicy twist of lettuce, mayonnaise and cheese. Irresistible!

Ingredients

  • 500 g chicken breast, chopped
  • 1/2 small green bell pepper
  • 1/2 small red bell pepper
  • 1 cebolla
  • ½ envelope of seasoning for fajitas (I use Mercadona's) optional
  • 30 g extra virgin olive oil
  • 50 g of water
  • 8 slices of sandwich cheese (I love the tender manchego)
  • 1 lettuce head finely chopped
  • 2 tablespoons soy sauce
  • 8 wafers of fajitas
  • 8 tablespoons mayonnaise
  • 8 slices of cheese at room temperature (whichever you like the most)
  • 8 teaspoons mayonnaise

Preparation

  1. We cut the chicken breast into small strips.

  2. We cut the onion into thin slices and do the same with the peppers. We booked.

  3. In a pan, heat the oil and sauté the vegetables until they are poached (about 5 minutes), stirring occasionally over medium heat.

  4. Now add the chicken and cook another 5 minutes, stirring so that it browns on all sides over medium heat.

  5. Add the seasoning (optional), the soy sauce and the water and cook over low heat for 15 minutes, with the pan covered. When 10 minutes have passed we check that there is still a little water, if not we add more. In the end it has to be left with a little bit of thick sauce. We test and rectify the salt if necessary.

  6. We put half of the wafers on a plate and heat it in the microwave for 1 minute at maximum temperature.

  7. We are filling them with a tablespoon of mayonnaise, the cheese slice and the filling. We add a little lettuce and wrap and close with a toothpick.

  8. We do the same with the other half of wafers.

  9. Ready to eat.

Notes

Freeze: if we have leftover filling, we can freeze it without problems[br]and we will have it ready for the next time we want to prepare these[br]delicious fajitas. [br]Ahead of time: we can cook the chicken with the vegetables in advance and then we will only have to heat the fajitas and assemble them immediately.
