Breadcrumb gratin, spicy and crispy

Always display there is leftover bread and we end up throwing it away because it has hardened and we do not know how to take advantage of it. Grating bread may seem silly to us if in the supermarket we find it already prepared and very cheap. But have you ever tried homemade breadcrumbs? Not a point of comparison with the industrial one.

Homemade breadcrumbs beats packaging in texture, it is crunchier and grainy and therefore batters come out much better. Another option is to use it for gratin. We mix the breadcrumbs with a mince of garlic and parsley and we already have a perfect dough to gratin dishes such as chopped meat, vegetables, fish or shellfish fillets.

Besides garlic and parsley, you can enrich the flavor of the breadcrumbs with powdered cheese, spices like pepper, hot paprika, or cumin. It is also very rich with lemon zest.
