We are already at the end of the Christmas holidays, so we have few feasts left to do. Even so, there is still the day of Kings in which many families gather. If you need a starter to prepare here I leave you a simple and very rich one, some apple and goat cheese tartlets, with a combination of sweet and salty that contrasts and that I particularly love.

These tartlets are a perfect appetizer for a special day.

Ingredients

Short crust tartlets or small puff pastry voulavants
2 apples (I used Pink Lady which was the ones I had at home, but you can do it with any other)
2 tablespoons sugar
75 gr. creamy goat cheese without rind
50 gr. whipping cream
shawl
pepper

Preparation

Peel and dice the apples.
Place them in a microwave-safe container and sprinkle with the sugar.
Cover the container with plastic wrap and place in the microwave for 5-7 minutes (power 800W). The apple should be soft, cooked.
Blend the apple with a mixer until we have apple puree. (If you like it with more texture, you can also mash the apple with a fork). Reserve in the fridge.
Place the cream and goat cheese in a saucepan, season to taste and put it on the fire, stirring until it melts. Reserve in the fridge.
Once the cream cheese is cold, mount it with a few rods until it is creamy.
Finally, it only remains to mount, fill the bottom of the tartlets with the apple puree and cover with the cream cheese with the help of a pastry bag.
You can decorate the surface with a little dill or some chopped walnuts.
