Ingredients

3 small carrots
Small potatoes 17
3 eggs
3 Bay leaves

1/2 red or green pepper

6 asparagus

For the vinaigrette:

1 small onion

Preparation

We wash the potatoes well and make a cut in the skin. We wash the carrots and also cut the skin.
We put them in a large saucepan with water along with the eggs, the bay leaf and the salt. We put everything to boil.
When everything is cooked, remove it from the heat, remove the water and let it cool.
Once cold, we peel the potatoes, carrots and hard-boiled eggs. We cut it into cubes.
We also cut 1/2 red pepper into squares. Chop the asparagus and add the corn.
We put everything in a wide font.
On the other hand we chop the onion with the parsley. The ideal is to do it in a kitchen robot so that everything is shredded. We add the oil, the vinegar and a little salt.
Before taking it to the table, we mix our already chopped ingredients with the vinaigrette.
