Ingredients
- 1 puff pastry
- 1 eggplant
- 1 Zucchini
- 4 or 5 tablespoons of caramelized onion
- 100 gr. grated emmental cheese
- oregano
- basil
- olive oil
- shawl
Preparation
Cut the aubergine and zucchini into slices of approximately 1/2 centimeter. (You can peel them or leave part of the skin, as you like).
Put a little oil on a griddle or frying pan and lightly grill the slices of aubergine and zucchini on both sides. Salt to taste and reserve.
Unroll the puff pastry and place it on an oven-safe tray.
Cover the puff pastry with the caramelized onion.
Next, place the slices of aubergine and zucchini in several layers, covering the onion.
Cover the vegetables with the grated cheese and sprinkle with oregano and basil.
Place in the oven preheated to 180ºC for approximately 30 minutes, until the cheese has melted and the puff pastry is done and golden brown.
