Ingredients

2 eggplants
4 tomates
200 gr of grated cheese
Some basil leaves
Sal Island
Pepper
Olive oil

Preparation

We wash the eggplant, dry it with a paper and cut it into slices a finger and a half thick. We place each of the slices on a baking tray and add a splash of olive oil and a pinch of salt to each one.
Bake for 10 minutes until we see that the eggplant is almost done.
We clean the tomatoes and cut them into small pieces. We put the a little chopped natural tomato on each of the slices of aubergines. On the tomato, we place some chopped basil leaves and the grated cheese. We put a little black pepper on top and bake for another 15 minutes, until we see that the cheese has completely melted.
We take out of the oven, let it cool down a bit and eat our aubergine pizza in one bite.
