All the aubergines to the poor They are a typical dish of Menorca which is made a lot in summer, which is the time of the aubergines. Despite being a very simple dish with few ingredients, the truth is that it is a good way to prepare this vegetable and it will serve as an aperitif or as a perfect accompaniment to meat and fish.

The original recipe is made only with aubergines, but I occasionally do it with zucchini as well because I really like the combination of both. So the recipe for today are aubergines and zucchini to the poor.

As always, in all traditional dishes there are variations according to areas or depending on the house in which it is prepared. When it comes to cutting aubergines and courgettes, the most common thing is to cut slices lengthwise, but there are also those who also later cut them into strips or who simply cut them into slices.

The breadcrumbs can be put on top once we have the aubergines in the baking dish or batter them before placing them in the dish.

And to give them a little more flavor, you can put a little paprika from La Vera or even sprinkle a little grated cheese.
