Aubergines "parmigiana"

Those of us who like aubergine cannot pass up trying a good Italian "parmigiana". I thought this recipe was typical of Parma, but no. "Parmigiana" does not come from parmesan but from "parmiciana", which comes to mean blind. The aubergines are layered in many layers like the boards of a blind to form the rich Sicilian 'parmigiana'.
