2 ripe avocados
1 green apple (Granny Smith type)
1 lime
250 gr of Greek yogurt
20 mint leaves
500 ml water

Preparation

Cut the avocados in half, separate the two halves and remove the bone with the help of a knife and remove the meat with a spoon. We put the avocado meat in the blender glass.
Peel the apple and remove the core and seeds, and cut it into small pieces. Put the apple in the glass next to the avocado. Grate half of the lime and squeeze the juice from the other lime. Put the lime zest and its juice in the blender glass.
We wash the mint leaves and dry them with absorbent paper. Add them to the blender glass along with the yogurt and water. Add salt and pepper and beat everything for about 3 minutes until the ingredients are well incorporated, always looking for a homogeneous texture.
Once we have the cream ready, we let it rest and cool for 2 hours in the fridge to take it fresh. To serve it, accompany it with toasted pine nuts, diced zucchini and some bread croutons.
