Potato and bacon bombs

Preparation

1. We will start preparing the balls by peeling the potatoes, its star ingredient. We will break them into medium pieces and cook them for 20 minutes in water, salt and a splash of oil, until we see that the potato falls apart easily with a fork. At that time we drain the water and mash the potatoes with the help of a fork in a bowl until a homogeneous and thick texture remains. At that moment, we added the grated cheese and crushed everything.

2. We take the smoked bacon cubes and fry them for a few minutes in a pan, so that they are crispy. We remove the excess fat with the help of absorbent kitchen paper and add them to the mashed potatoes. We reserve everything until it cools down.

3. Once we have the cold dough, make small balls by hand, and coat them in flour, egg and breadcrumbs. Put abundant olive oil in a frying pan and fry them until they are golden brown. Then place them on a plate lined with absorbent kitchen paper to remove any excess oil.
