This eggplant recipe is to lick your fingers. It's a quick and easy way to do vegetables with a side of cheese and tomato. We will plate the combination inside a tray and we will put it in the oven to gratin. This dish is ideal to accompany any meat or as a first course, it is also so good that it is ideal for the little ones.

Ingredients
- -1 large eggplant
- -1/4 medium onion
- -1 clove garlic
- -1 pot of 300 g of natural tomato or with a homemade fried
- -4-6 slices of cured cheese
- -200 g grated mozzarella cheese
- -A handful of fresh basil or parsley
- -Salt
- -Ground black pepper
- -Olive oil
Preparation
We wash the eggplant and cut it into normal sheets, not fine. We place them on a table and sprinkle salt on top. We will let them rest so that sweat with the salt.
You have to wait a few minutes so that the liquid you release can be removed with a piece of paper. This liquid will be the bitterness of the eggplant that we can remove and have a better flavor.
While we let them rest we are doing the tomato sauce. Peel and cut the onion in very small pieces. We do the same with garlic clove
Heat a few tablespoons of olive oil and when it starts to heat up we can throw the garlic and onion. Let it brown and then add the tomato.
Let it cook some 5 minutes and stir from time to time. We remove it from the fire and set aside.
In a frying pan, heat a splash of olive oil and We will fry the eggplants. Let them brown on both sides and set aside on a plate.
In a 18×18 cm square pan we put a layer of fried tomato and we will place on top a layer of aubergine slices.
Cover with another layer of fried tomato and we throw over the slices of cheese cured and grated cheese.
We cover again with another eggplant layer, we cast the fried tomato and chopped basil or parsley.
We cover everything from grated cheese and put it in the oven. We program to 200° with heat up and down and even see it gratin.
