Delicious and crispy chicken wings with teriyaki sauce, this wonderful oriental sauce that combines great with both meat and fish (with tuna for example). In this case, the sauce is enriched with pineapple which gives it a very special point. Normally, the wings come ready to cook, but if they came with the ends, it is better to remove them.

Ingredients

  • 1,5 kilos of chicken wings
  • extra virgin olive oil
  • flour. For the sauce: 1 can of pineapple in its juice
  • 120 ml of soy sauce
  • 60 ml mirin (rice wine) or white wine if available
  • 20 g grated fresh ginger
  • 2 cloves of garlic
  • 60 g brown sugar
  • 1 teaspoon of rice vinegar or apple cider vinegar
  • 1 tablespoon of sesame oil
  • 1 tablespoon cornmeal (cornstarch)
  • 1 tablespoon of cold water.

Preparation

  1. To make the sauce, put the drained pineapple, soy sauce, rice vinegar, and sesame oil in the blender glass.

  2. Blend until homogeneous. At this point, we can decide if we want a finer sauce (without lumps) by passing it through a strainer or a Chinese.

  3. In a small bowl, mix the cornmeal with the cold water.

  4. With a fork we break the possible lumps until it is completely diluted. We take the teriyaki sauce to a pan and when it starts to boil, remove it from the heat and add the diluted cornmeal.

  5. Stir quickly until thick. Let cool and reserve.

  6. We preheat the oven to 200º C.

  7. Brush the wings with olive oil and flour them, shaking off the excess flour. Place the wings in a baking dish in a single layer.

  8. Bake them for 20 minutes on one side and another 20 on the other, until golden and crisp.

  9. We serve the wings covered with the teriyaki sauce or we put the sauce in a bowl so that diners can dip them.
