This dish lacks the boiled rice to be a renewed Cuban rice. We offer you a basic recipe with spicy tomato sauce and later the baking of the eggs. You can add some more ingredient to the sauce or put cheese or béchamel on the eggs.

Ingredients

  • 1 tablespoon olive oil
  • 2 red onions
  • 1 red chili
  • 1 garlic clove
  • fresh parsley (or basil, coriander…)
  • 800 gr. ripe tomato pulp
  • 1 teaspoon of sugar
  • 4 eggs
  • oil and salt

Preparation

  1. Cover the bottom of a deep frying pan with oil and sauté the julienned onion, the seeded and chopped chile and the sliced ​​garlic

  2. When everything is soft, add the chopped tomato and sugar, add a little salt and cook over low heat until the sauce reduces.

  3. We transfer that sauce to a baking dish and put the four eggs on top

  4. We put salt on the yolk and bake at about 175 degrees until they are curdled

  5. Add the fresh herbs when the dish is resting out of the oven.
