Baked rib

Look what these look like Grilled Ribs. We have roasted them first in papillote and then with the oven at a very high temperature to get the surface to be that golden. In this way we get them to be juicy on the inside and crisp on the outside.

  • Pork ribs (about 1500 g)
  • Aromatic herbs

  1. The night before we marinated the ribs with oil, salt and aromatic herbs. We cover them with film or put them in a bowl and leave them in the refrigerator.
  2. An hour and a half before we want to serve them, we remove that plastic wrap and wrap each rack in paper. We wrap them first with greaseproof paper. Be careful, it is important that we have removed the transparent plastic.
  3. We then wrap them with aluminum foil. We place them on a baking tray.
  4. Bake at 180º (preheated oven) for approximately 1 hour.
  5. After that time we remove the papers and place the meat directly on the tray.
  6. Bake or au gratin at 250º for approximately 10 minutes or until golden brown.
