8 fine beef steaks

Preparation

We flatten the fillets and make small cuts on the edges to prevent them from wrinkling when cooking. We season.
We beat the eggs with a little nutmeg and grated cheese. Prepare a plate with flour and another with breadcrumbs. Coat the fillets first with flour, then with egg and finally with breadcrumbs.
Fry the fillets in hot oil so that they brown on both sides. We arrange them on a plate covered with kitchen paper.
We cover each fillet with a tablespoon of tomato, a slice of ham and another of cheese. Gratin a little so that the cheese melts. We serve with basil and lemon juice.
