See what a simple recipe and how beautiful it is. The bread eclairs What do you see and what makes a container you can make yourself since they are made with bread from the previous day. Nobody would tell, right? I put a photo for you so that you have no doubts and you know how to prepare them.

And then we have the filling. I have made it sweet quince and cottage cheese, a mixture that seems exquisite to me. But you can also fill them with other ingredients. Imagine… cream cheese and smoked salmon… ummm, what a starter for children and adults!

Fun recipe to use made with bread from the day before and with an original cheese and quince cream. Crispy, creamy... a delight!

Ingredients

  • 5 thin slices of bread from the day before
  • 50 g of quince paste
  • 150 g ricotta, drained

Plus

  • Canes or molds with the shape of a canutillo
  • Kitchen twine to tie
  • Pastry bag

Preparation

  1. The important thing in this recipe is to cut the bread from the day before into thin slices. Once we have them we will roll each slice in a mold. We will use kitchen threads so that they take the shape well, as seen in the photo.

  2. We put our eclairs on a baking tray and bake at 120º for 30 minutes (preheated oven).

  3. After that time we remove the rope, remove the molds and reserve.

  4. While they cool a little we prepare the filling. Put the quince in a bowl and mash it well with a fork. Add the drained cottage cheese and mix everything well.

  5. We place the mixture in a pastry bag and fill our eclairs with that cream. And we already have them, ready to serve.
