The nooks They are Italian cookies that remind me personally of Christmas. It may be because of the nuts or perhaps because they are often present in Christmas baskets ... In any case, they are the ideal accompaniment to a coffee.
We have put them prunes but you can replace them with sultanas raisins.
The funny thing about these cookies is the baked. We will start by baking the dough in the shape of a cylinder. After half an hour of baking we will remove that cylinder from the oven and, while hot, we will cut the slices. We will bake those slices again, at a lower temperature, so that they are very dry.
Cantucci of prunes and cashews

Ingredients
- 80 g pitted prunes
- 250 g flour
- 120 g of whole cane sugar or raw sugar
- 2 eggs
- 1 teaspoon yeast
- 80 g cashew nuts
Preparation
We chop the plums and reserve them.
In a bowl we put the flour and yeast. We mix both ingredients.
We add the sugar.
We also add the eggs and mix well, first with a wooden spoon and then with our hands.
If we see that the dough is too hard we can add one or two tablespoons of water.
Add the chopped plums and also the whole cashew nuts.
We integrate everything well with our hands.
On a sheet of greaseproof paper we form a cylinder with our dough. We put it on a baking tray, on its own baking paper. We can put a little flour on the surface if we want.
Bake at 180º, heat up and down, (preheated oven) for 30 minutes.
After that time we cut into diagonal slices making a roll and put those slices back on the tray, on the baking paper.
We lower the oven to 140º and bake another 20 minutes.
Let cool and we have our cantucci ready.
