Enjoy these eclairs on your table. It is another special way of creating a homemade guacamole and knowing that you can combine it with this original idea. You can make some eclairs with wafers for dumplings, with the help of some steel molds that you can find in confectionery. The only thing left would be to fry them and fill them with this healthy cream. Do not lose detail in how they are made and how you will like them.

Ingredients
- 6-8 wafers to make dumplings
- 1 Avocado
- 1 small spring onion
- 1 ripe tomato
- 1 pinch of chilli powder (optional)
- Fresh cilantro, if you don't like the taste you can choose parsley
- The juice of 1 lime (or small lemon)
- 1 teaspoon of paprika
- Olive oil for frying in a small pan
- Sal Island
Preparation
For this recipe we will need some molds made of steel that will help us make the eclairs. For it we will wrap the molds with the wafer and we will tighten its ends to seal its union.
We place them on a small source and we will put them a few 20 minutes in the freezer , in this way we can fry them with better results.
While we can go making the filling. Open the avocado, remove the pulp and crush with a fork over a bowl.
On a board we will chop very finely onion and tomatoes. We add it to the avocado.
We add salt to our liking, the juice of the lime or lemon and the chilli pepper (optional).
We mix everything very well. We'll put it in a pastry bag without any nozzle.
Heat the oil in the pan to fry the wafers. We take the eclairs out of the freezer and fry over medium high heat. We will make them well browned on all sides.
Once fried and cooled we will proceed to fill them with the avocado. Place them on a plate and sprinkle them with the paprika We serve cold.
