250 ml. liquid whipping cream
4 yolks
125 gr. sugar
pieces of caramel to decorate

Preparation

We put in a saucepan 100 gr. of sugar with about 6 tablespoons of water and let it cook over moderate heat until it forms a golden caramel.
Off the heat, add another 4 tablespoons of cold water to the caramel, stirring constantly.
Bring the milk to a boil and pour it over the warm caramel, stirring continuously to mix well. We take this mixture to the fire and let it come to a boil so that the milk dissolves in the caramel.
Whip the egg yolks with the remaining sugar, add the cream, mix and gradually add the hot caramel in a thread, beating with the whisk.
When we have a homogeneous cream, we put it on a low heat without stopping beating until we obtain a thick cream. Let it cool off the heat.
We freeze this cream, and we will stir it every 45 minutes to obtain a creamy ice cream.
