Pasta carbonara, they will leave the plate empty!

Preparation

1. Put the pasta to cook, while we prepare the carbonara sauce.

2. Once the pasta is cooked, drain it and set aside.

3. In a pan put a tablespoon of olive oil. When the oil is hot, add the very finely chopped onion so that it is hardly noticeable later, and let it sauté. Once you have it poached, add the smoked bacon cubes and let them cook with the onion for a couple more minutes.

4. Remove the excess oil from the pan and add the liquid cream. Let it mix with the onion and bacon for a couple of minutes and add the egg yolk. Keep stirring and add a little pepper, nutmeg and salt to the sauce. Remove from heat.

5. Put in the pot without water, the pasta and add the carbonara sauce. With the fire to a minimum so that it does not burn, let all the ingredients mix and add a little grated cheese.

6. Serve in a deep plate and if you want, add a little more grated cheese.
