There are many ways to make pasta carbonara. There are those who use cream and those who prefer to make it with eggs. We are going to prepare it today with egg yolks.

We will also put bacon, parmesan and pepper. You will see how good it is this way.

We will make a carbonara pasta with egg, but only with the yolks.

Ingredients

Yolks 6
320 g pasta
150 g of bacon
50 g of Parmesan (if we have, we can use sheep's cheese)
Pepper
Sal Island

Preparation

In a frying pan, brown the bacon well, removing any fat that is released.
In a saucepan we put plenty of water. When it starts to boil, we salt it and, after a few minutes, we add the pasta.
We cook the time indicated by the manufacturer.
Meanwhile we separate the whites from the yolks. We are putting the yolks in a bowl and we reserve the whites for other preparations.
We beat the yolks. We add salt and pepper.
We add part of the grated cheese. We mix well.
Once the pasta is cooked, we add it to the pan where we have the cooked bacon. It is not necessary to drain the pasta a lot and it is best to keep the cooking water (or at least a little) in case we need it later.
Sauté the pasta with the bacon.
Remove the pan from the heat and add the egg, cheese and pepper mixture that we have prepared previously. We mix well.
If we think it is dry, we can make it juicier by adding a little cooking water to the pasta.
We serve immediately with more grated cheese and freshly ground pepper.
