For the cake:

1/3 cup (250 ml.) Milk
7 gr. baking yeast powder
2 and 1/2 cups of bakery flour
4 eggs (2 whole + 2 yolks)
3 tablespoons sugar
the zest of 1 lemon
1 teaspoon of salt
1/2 teaspoon freshly grated nutmeg
175 gr. slightly melted unsalted butter

For the filling:

1 cup brown sugar
1 tablespoon ground cinnamon
2/3 cup of chopped walnuts
1 / 2 cup of flour
1 / 2 raisin cup
1/2 cup butter, melted
orange or lemon zest

For the frosting:

1 cup of powdered sugar
a tablespoon of water
green, yellow and purple colorants
white sugar to decorate

Preparation

We start by making a previous yeast dough to ferment the dough. Temper the milk and, off the heat, add the butter. Let it cold down. Separately, in a large bowl, dissolve the yeast in a little warm water along with a tablespoon of white sugar. Let stand until the preparation is creamy, approximately 10 minutes. When this mixture begins to bubble, we add the cold milk mixture.
In another large bowl, beat the eggs and add the rest of the sugar, salt and nutmeg. Add the milk and yeast mixture and mix. Then, we add the flour little by little and mix, until it is completely integrated into the dough.
Transfer the dough to a lightly floured surface and knead until smooth and elastic, about 8 to 10 minutes.
Lightly grease a large bowl, place the dough inside and brush with oil. Cover with a damp cloth or plastic wrap and let the dough rise in a warm place (we leave you some tips in this link) until it doubles its volume, approximately 2 hours. When this process is finished, we hit the dough several times and divide it in two.
Let's go with the filling. Mix the brown sugar with the ground cinnamon, the chopped walnuts, the flour and the raisins. Add the melted butter and mix until obtaining a homogeneous cream. We can flavor with orange or lemon zest.
We roll out each half of the dough into large rectangles (about 25×40 cm.) We distribute the filling evenly over each portion of dough and roll up each half, starting from the wide side. Now we form a donut with each dough roll. We transfer them to two trays covered with baking paper. We make superficial cuts in each roscón with a knife. We wait again for the bagels to double their size in a warm place. This time 45 minutes would suffice.
We bake the king cakes in a preheated oven at 190 degrees for 30 minutes. Meanwhile, we can prepare the frosting by mixing the sugar with a little water to obtain a thick white cream.
Once the cake has cooled, we drizzle it with icing and let it set. We color sugar with powder or liquid coloring (we will have to mix very well with a little water) and decorate the king cake.
