Ingredients
- 150 ml of hot water
- 1 package of fresh yeast (Mercadona type)
- 2 teaspoons table salt
- 300 gr of strength flour
- Extra virgin olive oil
- A sprig of fresh rosemary leaves
- 200 gr of colored cherry tomatoes
- 50 gr of grated Parmesan cheese
- A little salt maldon
Preparation
To make the dough and that it rises correctly, we will need about 40 minutes. Preheat the oven to 180 degrees.
In a bowl, mix the yeast with the hot water and let it dissolve. Add the salt, and 150 gr of flour and mix until you get a soft and somewhat sticky dough. Add the other 150 gr of flour remaining and mix everything well. You will notice that the dough is still somewhat sticky.
Put the dough on a plate made into a ball and let it double in size for about 40 minutes, covered with a cotton cloth and placed in a warm place to ferment beforehand.
Once you have it fully grown, on a baking tray, put baking paper. And on it place the dough. With the help of your fingers, go making a rectangle more or less like the one I show you in the image.
Press on certain points of the dough with the help of your fingers, so that they are marked, and on those pressures put a little extra virgin olive oil. It will give a spectacular flavor to the dough, so do not skimp on oil :)
Cut the cherry tomatoes in half, and place them around the dough, pressing well. Once you have them in place, spread the rosemary leaves evenly over the entire surface. Sprinkle the Maldon salt and add a layer of grated Parmesan cheese on top.
Bake for about 20 minutes until the focaccia is golden.
