Ingredients

1 large chicken, diced
1 cebolla great
3 cloves of garlic
2 eggs
2 sliced bread
Almonds
A little saffron
A glass of white wine
2 glasses of chicken broth
Ground black pepper
Extra virgin olive oil

Preparation

We put the eggs to cook in a saucepan, and once cooked, we separate the yolk from the white.
In a pan we put a little olive oil and fry the almonds, and leave them reserved. We do the same with the pieces of bread, and leave them reserved.
In a saucepan we put a little olive oil and brown the chicken and season it with salt and pepper. Once it's golden, we leave it reserved. In that same oil, we poach the chopped onion together with the chopped garlic. Add the chicken and let everything brown.
In the blender glass we put the almonds, the bread, a little salt, the egg yolks and we crush everything.
We add the mixture to the chicken, along with the white wine, and the chicken broth. We let everything simmer for 45 minutes.
When the chicken is almost ready, we put the chopped egg whites into it and serve it to the table.
