2 chicken breasts
1 tablespoon chopped fresh parsley
1 tablespoon chives
3 tablespoons of butter
2 cloves of garlic
beaten eggs
flour
olive oil
bread crumbs
pepper

Preparation

Grate the garlic and finely chop the parsley and chives. We mix the butter these ingredients, salt and pepper a little and put it on transparent film. We form a rectangular-shaped package and put it in the freezer for 15 minutes.
Meanwhile we open the breasts into four book-shaped fillets. We season.
Cut the butter into 4 pieces and put a piece on top of each breast. Roll them up and tuck the ends in to prevent the butter from spilling out.
Dip the breast rolls first in the flour, then in the beaten egg and finally in the breadcrumbs. We let them rest for 1 hour in the fridge so that the breading is consistent.
Fry the breasts in abundant hot oil until the batter is evenly browned, but taking care that they are cooked on the inside.

Notes

More possibilities: We can prepare a good amount of butter and keep it airtight in the fridge to also use it with grilled fish, pasta or boiled potatoes.
