8 thin chicken fillets
28 wild asparagus
100 gr of Parmesan cheese
Sal Island
Balsamic vinegar
Mustard
Sugar
Laurel
Thyme

Preparation

Prepare a griddle with a drizzle of oil and put it on the fire. When the oil is hot, place the asparagus and grill them. When they are almost ready, add a little Maldon salt. Let them be done little by little.
On a cutting board, stretch out the chicken fillets and salt and pepper them. When you have the asparagus ready, put three asparagus on each chicken fillet with a little Parmesan cheese, and roll them up. So that you don't miss anything at all, tie each fillet with a string or fix it with the help of a toothpick.
Preheat the oven and place the rolls on a baking rack lined with parchment paper. Put them in the oven for about 25 minutes until the fillets are golden.
To make the Modena vinegar sauce, put the vinegar, sugar, bay leaf and thyme in a saucepan. Bring everything to a boil and cook until the sauce is reduced by half (about 12-15 minutes). Then strain to remove the herbs and reserve the sauce.
Serve the chicken rolls with the asparagus with a little bit of balsamic vinegar sauce and a light strip of mayonnaise.
