Ingredients

  • 500gr of potatoes

  • 700gr of sliced ​​mushrooms
  • 8 chicken thighs
  • Pepper
  • 1 tablespoon flour
  • 3 teaspoons extra virgin olive oil
  • 250ml chicken broth
  • Oregano

Preparation

  1. Boil the water with a little salt and the whole potatoes for approximately 20 minutes. After this time, we drain and reserve them.

  2. In a pan we put two tablespoons of olive oil and brown the chicken thighs for about 8 minutes on each side. We leave them reserved.

  3. In that same pan, fry the onion with a little more oil until it takes on color. Add a little salt and pepper. Add the mushrooms and let everything cook for another 5 minutes.

  4. After that time, add a tablespoon of flour and spread it throughout the pan. Let it brown for about 5 minutes and pour in the hot chicken broth, stirring non-stop until the sauce thickens. We test the point of salt and if we see that it needs a little more, we add.

  5. In a dish we put the chopped potatoes as a base and on top the chicken with the mushrooms, and we give them a last blow of heat in the oven for 8 more minutes. After that time, we add some aromatic herbs such as oregano and serve.
