Nothing is more versatile than chicken, it can be cooked in a thousand different ways and it is always good. Today we are going to prepare some chicken thighs with peppers and onion that are very rich. With a slight oriental touch thanks to the soy sauce that we add.
We can accompany it with potatoes, a little rice or a little pasta and we will have a very complete and healthy dish.
At home we fight over the thighs and that is why when I have the opportunity I buy only thighs and that way there is no problem. But this recipe can be made perfectly with any part of the chicken, so try if you want only with breasts if it is the part you like the most or with all the chopped chicken.
- 6-8 chicken thighs
- ½ white onion
- ½ red onion
- 1 green pepper
- 2 cloves of garlic
- 1 not very large red pepper
- 8 mushrooms
- 3 tablespoons soy sauce
- 50 gr. white wine

- Cut the peppers into strips and set aside.
- Cut the onion into julienne strips and chop the garlic. Reserve.
- Cut the mushrooms into quarters or slices. Reserve.
- Pour a splash of oil into a frying pan and heat. With medium-low heat Add the minced garlic cloves and cook for 1 minute.
- Add the chicken thighs, seasoned to taste and lightly brown them for 2-3 minutes.
- Remove the chicken with the garlic from the heat and reserve.
- In the same frying pan to fry the chicken add a little olive oil and once hot add the vegetables that we had reserved: onion, peppers and mushrooms.
- Salt the vegetables and cook over medium-low heat for 10-12 minutes until we see that they are poached.
- Put the chicken that we had reserved in the pan with the vegetables.
- Pour in the white wine and soy sauce and cook for another 4-5 minutes over medium-high heat so that the alcohol in the wine evaporates.
- Cook a few more minutes and turn the chicken and vegetables from time to time, once we see that both the chicken and the vegetables are tender we can remove from the heat and serve.
