4 chicken escalopes (600 g)
1 cebolla
1 garlic clove
2 heaping teaspoons curry (or to taste)
1 cinnamon stick
1 pinch of cayenne pepper
1 tomato (150 g)
1 natural yogurt
Sal Island
Pepper
Olive oil
Grated coconut for garnish

Preparation

Peel and chop the onion and the garlic clove; Put them in a microwave-safe container with a tablespoon of oil, mix and cook for 1' 30'' at maximum power.
Add the spices, mixing well, then dip the schnitzels into this mixture and mix well until smeared. We place them in the dish and cook them for 8 minutes at 700 W, covered.
In a bowl, mix the peeled tomato, seeded and cut into cubes. Add the yogurt and mix. Season with salt and pepper and pour over the chicken.
Cook the mixture for 3 more minutes at 700 W.
Put the chicken on a tray and beat the base of the sauce, pouring it over the meat finally.
Serve piping hot with grated coconut on top and boiled rice as a garnish if desired.
