1 cebolla
1-2 carrots
2 blocks of frozen spinach
1 large jar of canned chickpeas
1 large potato
150-200 ml. vegetable broth
sweet and spicy paprika

oil and salt

Preparation

Cook the spinach in salted water, drain it and reserve it.
Finely chop the onion and carrot and fry them in a deep frying pan with oil and a little salt. When the vegetables are tender, add the potato, also chopped. We continue to fry until the potatoes are almost tender. We can add a little vegetable broth so that the potatoes cook sooner.
Then we add a little curry to the pan to taste and the quantities that we prefer of each type of paprika. Season with salt and pepper and stir well. All that remains is to put the chickpeas in the stew together with the spinach and mix again.
Add a little vegetable broth and cook over medium heat until it has evaporated. It takes about 10 minutes or so.
