Chocolate and cheese cake with biscuit base

Preparation

1. We make the base by crushing the cookies

2. We can do it either with a robot, or by putting them in a freezer bag and rolling them over, until they are crumbs.

3. Melt the butter and mix it with the biscuits, forming a dense dough

4. Grease the removable mold with butter and pour the cookie dough into it; distribute and press with a spoon, raising the edges until covering the base of the mold

5. We put it in the fridge while we continue preparing the rest

6. We preheat the oven to 170º

7. We melt the chocolate, either in the microwave (at short intervals and not at maximum power) or in a bain-marie, until it completely dissolves.

8. We whip the cream

9. In another bowl, mix the mascarpone cheese with the eggs and sugar, gradually add the whipped cream, the melted and tempered chocolate and the starch, stir carefully until all the ingredients are well integrated.

10. Pour the filling into the mold over the cookie dough and bake for about 55 minutes, check that it is cooked by poking with a toothpick and checking that it comes out clean

11. Let it cool down to room temperature

12. When we unmold it, cover it with the melted chocolate cover and refrigerate it for a couple of hours.
