One of the christmas essentials at my house, it's fish soup. Opening the door of the house and that from the hallway that smell so characteristic of Christmas comes to mind, it is a pleasure. If you are like me, one of those who prefer a good fish soup (and seafood, of course), at dinner on the night of Christmas, do not miss this delicious recipe.

Ingredients

  • 1 head of hake
  • 1 monkfish head
  • Carrots 4
  • 1 leek
  • 1 Tomate
  • 1 garlic clove
  • 350 gr of prawns
  • 230 gr of clams
  • 4 slices of hake
  • 300 gr of clean monkfish
  • 250 gr of squid rings
  • A little coriander
  • Angel hair noodles
  • Water
  • Extra virgin olive oil
  • Sal Island

Preparation

  1. To make the base of our soup, which will be the fish broth, the first thing we will do is prepare a pot with plenty of water and in it we will submerge the head and spine of the hake and monkfish, two of the carrots and the green part. of the leek We let everything cook over medium heat for about 40 minutes. Once that time has passed, strain the heads and reserve the broth.

  2. In another pot we put a little extra virgin olive oil and poach the garlic once we have laminated it, the part of the leek that we have left reserved, well laminated and the two carrots that we have left, also cut into small pieces.

  3. Brown the vegetables, and add the peeled and diced tomato and let everything cook.

  4. Once we have it, we add a little broth, remove from the heat and crush the vegetables with the help of the blender.

  5. We put the pot back on the fire, and add the chopped hake, the prawns, the chopped squid and the monkfish pieces. Add all the remaining broth and when it starts to boil, add the noodles. Two minutes before turning off the heat, add the clams and let them open.

  6. Garnish with a little coriander and serve very hot.
