Coconut and lemon balls

Ingredients
- 2 cups of grated coconut
- Another handful of grated coconut to coat
- Half a cup of ground almonds
- 3 tablespoons honey
- Zest of a lemon
- The juice of a lemon
- 2 tablespoons coconut (or sunflower) oil
Preparation
The steps are very simple. In a kitchen robot like Thermomix we can add all the ingredients together.
We'll beat it up mix well. In Thermomix we program 30 seconds at speed 3,5. We can stop in the middle of the process, stir with a spoon and re-program a few more seconds. You can also do this step by hand, where we stir the ingredients well to form a compact mass.
It is not necessary to put it in the refrigerator to solidify, if not we will take small portions of dough, the we will squeeze well with our hands and we will form the balls. Finally the batter well with the grated coconut.
